you've changed my life! thanks for teaching me how to make this sauce - i made it with whole wheat flour and it's still better than anything i can buy at a store.

find me a saucier in a kitchen that has enough time to screw around measuring out exact amounts of butter, then flour, then milk, then cheese to add just to do a single sauce. maybe if you're doing a huge batch of sauce it might be worth it, but big batches of cheese sauce don't take to prolonged heating since the cheese will start to split. this way is the best way in most cases. if your saucier has enough time to measure for each entree your kitchen is not busy enough.

great ides with the cooking eith your senses. but the only thing i must say is that if you do this your self with a diffrent recipy i would make it with a recipy so u know what it looks like and then make it with your senses. if that makes sense. 5 star video definetly

alfredo sauce is a lie. we don't have it in italy, i tried and that tastes like shit. Please don't use it :(

To make my bechamel, I usually barely simmer the milk and add my roux to that a little at a time. Still turns out great! Love the vid, thanks Chef!
